Why do the crisper drawers freeze my produce?

The short answer

Usually position and packing rather than a fault. Sub-Zero only fits a humidity control to the storage drawers on two models, so on everything else the drawer is a box in the airflow, not a climate you can set. Sub-Zero Appliance Repair Denver — (303) 729-0972.

The inside of an emptied white compartment: a louvred air vent set under the top shelf, moulded shelf rails down the left wall and the edge of the door seal at the right. Labelled on the photograph: air vent, door seal edge, shelf rails.

Before you call

  1. Move the drawer's contents away from the rear wall of the compartment and leave a finger's width behind them.
  2. Check the drawer runs all the way home. A lid standing proud leaves the produce out in the compartment air.
  3. Look at the panel. Sub-Zero recommends 38°F on the refrigerator side; a colder setting is the first thing to undo.
  4. Unload the shelf above. An overfilled cabinet is on the manufacturer's list of things that stop air moving properly.

Stop here and call Sub-Zero Appliance Repair Denver on (303) 729-0972 if the produce still ices over with the drawer closed and the panel at the recommended setting.

What it usually turns out to be

  • A drawer left ajar

The tomatoes at the back of the drawer go first while the middle of the shelf above is untouched, and the lid never quite meets the rail.

  • Air that cannot get past

The cabinet is packed, the drawers are full to the lid, and the cold stacks up in one place instead of spreading.

    Quoted after the diagnosis

  • A seal letting room air in

Warm damp air meeting cold produce condenses on it, then freezes, and the gasket shows a tear, a crack or dry rot along one edge.

When it is worth a visit

If the drawers are seated, the shelf above is clear and the panel is where Sub-Zero puts it, the next step is a measured reading rather than another guess, taken in the drawer itself and read against what the panel claims.

What the drawer is actually for

A crisper is a box that slows the exchange between the produce inside it and the compartment around it. That is the whole design on most Sub-Zero cabinets: no vents you can set, no sliders, nothing electrical. The manufacturer says so itself — outside two models, the storage drawers carry no humidity control.

Which means the drawer is only as good as its seal against the rail and the space around it. Push it home and it holds a still, damp pocket that keeps lettuce upright far longer. Leave it a quarter inch short, or pack it until the lid rides up, and that pocket is gone; the produce is simply sitting in the compartment, and the compartment is running at a temperature chosen for milk and meat.

So the fix is nearly always mechanical. Unload, reseat, leave room at the back, and look again the next day before touching a single control.

Follow-up questions

Do Sub-Zero crisper drawers have a humidity slider?

On almost none of them. The manufacturer states plainly that there is no humidity control on the storage drawers other than on models 542 and 561, so if your drawer has no slider that is how it was built, and the answer lies in loading rather than settings.

Why does it only happen to the salad and not the milk?

Leaves are mostly water with no packaging around them, so they take on whatever the air near them is doing. A carton has a wall between the milk and the draught. That is why produce is the first thing to show a problem that the rest of the shelf is shrugging off.

Could the dry air here be making it worse?

Dry room air does not reach inside a sealed cabinet, so the short answer is no. What Denver's dryness does change is what you notice: produce loses moisture faster once it is out on the counter, so limp lettuce gets blamed on the fridge. Sub-Zero Appliance Repair Denver measures rather than guesses.
